Honey Gingerbread Cookies






Baking fragrant Christmas Honey Gingerbread cookies is a whole ritual that makes you feel that the holidays are just around the corner. This is something that adults and children can take part in, and then everyone will enjoy the result. When baking honey gingerbread cookies, the home is filled with a unique aroma of spices, the mood becomes festive, and it is becoming clear that very soon, it will be Christmas and New Year. The most magical time of the year!


Today I am sharing one of our favorite Honey Gingerbread cookies recipe that is a must on our holiday baking list. They are easy to make, perfect for decorating and make beautiful ornaments, and of course, very delicious!

RECIPE



INGREDIENTS


  • 1/2 cup butter

  • 1 cup honey

  • 1/2 cup brown sugar

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon ginger

  • 1 teaspoon cinnamon

  • 1 peel of lemon zest

  • 2 egg

  • 1/3 teaspoon salt

  • 2 tablespoon cocoa (optional)

  • 4 cups of flour

  • 1/2 teaspoon baking soda



DIRECTION


  1. Melt honey, sugar, and butter over low heat until dissolved. Remove from the heat. Mix spices with cocoa, zest, and salt. Add to the honey mixture.

  2. After it has cooled completely, add the eggs.

  3. Mix the flour with baking powder and add it to the spice-honey mixture.

  4. Knead the dough. It should be soft but not sticky to the hands. Wrap it into the plastic wrap, and put it in the refrigerator overnight (or at least 3-4 hours). It is convenient to knead in the morning and bake in the evening, or vice versa.

  5. Before baking, I recommend removing the dough from the refrigerator in advance, about 30 minutes, so that it softens and is convenient to work with.

  6. Preheat oven to 375 F.

  7. Roll out the dough, cut out the figures, and bake for about 10-15 minutes (I baked for 12 minutes). The honey gingerbread cookies should be golden brown. Please note, the less you bake, the softer they will be, the longer the firmer. If you are planning on decorating the Christmas tree with gingerbread cookies, it is better when they are firmer. Use a cocktail straw to make a small hole for the string before baking.



FOR THE ICING


  • 1 egg white

  • 1 cup powdered sugar

  • 1 teaspoon lemon juice


DIRECTION


  1. Beat egg white, gradually adding powdered sugar until the icing is smooth. In the end, add lemon juice. Depending on the size of the egg, you may need a little less or more powdered sugar.

  2. Next, transfer the icing into a parchment envelope or pastry bag and decorate the cookies. You can draw anything, give free rein to your imagination, and each honey gingerbread cookie will be unique and wonderful!
