Fresh Herbs and Feta Omelet - a simple, quick to prepare, very tasty, and healthy breakfast. Sprinkle freshly grated cheese on top, and it will be even tastier!

4 large eggs
2 tablespoon finely chopped chives
2 tablespoon finely chopped fresh basil
2 tablespoon finely chopped fresh parsley
1 table spoon finely chopped dill
2/3 cup mashed feta cheese
1 tablespoon ghee or olive oil
salt and pepper to taste (remember that feta can be pretty salty)
1 tablespoon freshly graded parmesan cheese for the top (optional)
Crack the eggs into a small mixing bowl and beat with the fork. Add the herbs and cheese, season with the salt and pepper and stir.
Heat the ghee in a nonstick skillet until hot. Pour in the eggs mixture and cover with the lid for about 4-5 minutes until its done, top should be firm and not runny.
Sprinkle with parmesan chesse (optional)
