Easy Blackberry & Blueberry Strudel- using a ​pizza stone

This is an easy version of traditional strudel using pre-packaged puff pastry. I decided to use my pizza stone, and let me tell you it makes such a difference! It was very crispy and evenly cooked everywhere.  If you don't have a pizza stone, use a regular baking pan, lined with parchment paper. 


You'll need 

2 cups blueberries and blackberries, fresh

1 egg

2 tbsp cornstarch

3 tbsp  sugar, I used organic brown 

1 tbsp sugar, for the top

1 package ready puff pastry, frozen

1 tbsp flour 

1 pizza stone 

1 pizza spatula


  • Preheat the oven to 425 degrees F. With pizza stone in it

  • Unfold the pastry.  Leaving it on a parchment paper place the berries in the center of the pastry, leaving about 3 inches on both ends

  • Sprinkle sugar and cornstarch on top of the berries

  • Bring both sides of the pastry over on top in the middle and pinch them together. Do the same for the ends

  • Using parchment paper for help roll over strudel on a pizza spatula previously sprinkled with flour

  • Cut diagonal lines on top of the pastry

  • Brush it with an egg wash and sprinkle with remaining sugar

  • Carefully transfer ready strudel from pizza spatula to preheated pizza stone

  • Bake for about 25 minutes or until very golden brown

  • Serve warm with your favorite vanilla ice cream
