We've been very busy in our house, making all kind of Christmas cookies, I think for the kids this is the favorite part about holidays.
Today, I'm sharing these beautiful vibrant citrus cookies. I twisted original recipe a bit because I wanted them to look colorful and full of flavors. I added powdered vitamin c that added extra sourness and flavored lemon sugar was the perfect garnish on top of the white chocolate. They are light, refreshing, full of citrus flavor and just pure melt-away goodness!
Ingredients: 160 g butter, at room temperature
130 g sugar
260 g flour
20 g corn starch
1/2 teaspoon salt
2 tablespoon orange juice
Zest of two oranges, I use organic unwaxed
1 packages plant based yellow food coloring, I used Food Colors from Nature by Color Kitchen
1 package white chocolate chips, melted
Citrus flavored decorating sugar
Using either hand or standing mixer, combine butter and sugar. In the separate bowl combine all of the dry ingredients and slowly add to the butter mixture. Mix thoroughly. Dough consistency should be very similar to a children's play-dough, easy to work with.
Separate whole mass in two equal parts. Roll up two sausages, wrap with a cling wrap. Refrigerate for an hour or overnight.
Preheat oven to 350 degrees. Take out cookie dough from refrigerator and disregard cling wrap, cut into 1 cm slices. Place them on a baking sheet. Bake for 17 minutes. Let it cool entirely without taking it off baking sheet.
For garnish; either sprinkle with powder sugar thoroughly or dip half of the cookie into melted white chocolate and sprinkle with flavored decorating sugar or sprinkles. I used Meyer Lemon flavored sugar by Chocolatier. It gave a delightful citrus kick at the end.
